Ingredients
- 4 Eggs (hard boiled)
- 2 tablespoons ranch dressing (home made) or sour cream (full fat)
- 1⁄4 cup onion (thinly sliced)
- 1⁄2 radish (optional)
- 1⁄4 cup English cucumber, diced
- salt, black pepper to taste
Method
- Boil eggs: Place eggs in a cooking pot. Add enough water to fully immerse the eggs. Cook on high-medium heat for about 15- 20 min. Let them cool off for 5 min. Drain off hot water and fill in cold water in the pot. Peel eggs. You could save time by boiling 20- 30 eggs over the weekend.
- Cut eggs in 4-6 pieces.
- Add vegetables, salt, pepper, ranch/sour cream. Mix well. Its ready to eat.
