An easy salad to accompany any meal.
Ingredients
- 1 lettuce head, chopped
- 1 ripe avocado, diced
- 1 tomato, diced
- 1/3 red onion, sliced
- 1 tsp freshly sqeezed lemon juice
- 1/2 tbsp apple cider vinegar (recommend Bragg’s raw apple cider vinegar)
- 1/2 tsp salt
- 3/4 tsp black pepper
- 2-3 tbsp toasted sliced almonds*
- 2 tbsp cilantro leaves, chopped
- 2 tbsp olive or avocado oil (mix them if preferred)
Method
- In a large mixing bowl, add all the vegetables. Add cilantro, salt, pepper, vinegar, lemon juice and mix well.
- Garnish with almonds.
Notes:
Makes 2 servings
To toast almonds at home: heat a cooking pan on medium flame. Place sliced almonds in it and cook for 3-5 minutes until golden brown. To flavor them, add 1 tsp of coconut oil, cinnamon powder, black pepper, chili flakes.
