Quick and easy tomato soup
Ingredients
- 1 cup marinara (recommend Rao’s sauce) or 3- 4 big tomatoes on the vine
- 2 tsp ginger minced
- 1 tbsp garlic, minced
- 1/2 tsp salt
- 1 tsp black pepper or to taste
- 1 tbsp avocado oil
- 1/4th cup butter or heavy cream
- 1 1/2 cups water (adjust to desired consistency of soup)
- 2 tbsp chopped basil leaves for garnishing
- 1/2 onion if making with tomatoes instead of marinara
Method
Making soup with marinara
- Warm oil in a pan.
- Saute ginger, garlic. Add marinara.
- Cook for 10 minutes on low-medium heat.
- Add water. Mix well. Cook for 2 more minutes.
- Add cream. Garnish with basil.
Making with tomatoes
- Dice tomates, onion, carrots.
- Heat oil in a pan.
- Cook ginger, garlic, diced onion and tomatoes on low-medium heat for 15 minutes (or until soft) with frequent stirring. Closing the lid of the pan helps to soften and cook the vegetables faster.
- Add water, salt, pepper, cream/butter.
- Transfer above mixture to a blender and blend until all vegetables are crushed well
- Transfer back to the pan and cook for another 2-3 min.
- Garnish with basil leaves
