Tomato soup

Quick and easy tomato soup

Ingredients

  • 1 cup marinara (recommend Rao’s sauce) or 3- 4 big tomatoes on the vine
  • 2 tsp ginger minced
  • 1 tbsp garlic, minced
  • 1/2 tsp salt
  • 1 tsp black pepper or to taste
  • 1 tbsp avocado oil
  • 1/4th cup butter or heavy cream
  • 1 1/2 cups water (adjust to desired consistency of soup)
  • 2 tbsp chopped basil leaves for garnishing
  • 1/2 onion if making with tomatoes instead of marinara

Method

Making soup with marinara

  1. Warm oil in a pan.
  2. Saute ginger, garlic. Add marinara.
  3. Cook for 10 minutes on low-medium heat.
  4. Add water. Mix well. Cook for 2 more minutes.
  5. Add cream. Garnish with basil.

Making with tomatoes

  1. Dice tomates, onion, carrots.
  2. Heat oil in a pan.
  3. Cook ginger, garlic, diced onion and tomatoes on low-medium heat for 15 minutes (or until soft) with frequent stirring. Closing the lid of the pan helps to soften and cook the vegetables faster.
  4. Add water, salt, pepper, cream/butter.
  5. Transfer above mixture to a blender and blend until all vegetables are crushed well
  6. Transfer back to the pan and cook for another 2-3 min.
  7. Garnish with basil leaves
