Combine this side with spicy chicken and avocado to make it a meal. Doesn’t need much attention while cooking.
Ingredients
- 1 lb okra, tops cut off and okra sliced longitudinally into 2-3 pieces
- 1 onion, diced
- 1/2 tsp curry powder
- 1/2 tsp turmeric
- 1 tbsp tomato paste or 1 tsp mango powder (amchur)
- 1/4 tsp salt
- 1/4th cup avocado oil for cooking (adjust amount as needed)
Method
- Heat oil in a broad pan.
- Add spices, salt, okra, onion, tomato paste/amchur. Cover the lid of the pan.
- Cook on low-medium heat for 15-20 minutes. Turn okra 2-3 times, with a spatula, in between.
