Sauteed okra

Combine this side with spicy chicken and avocado to make it a meal. Doesn’t need much attention while cooking.

Ingredients

  • 1 lb okra, tops cut off and okra sliced longitudinally into 2-3 pieces
  • 1 onion, diced
  • 1/2 tsp curry powder
  • 1/2 tsp turmeric
  • 1 tbsp tomato paste or 1 tsp mango powder (amchur)
  • 1/4 tsp salt
  • 1/4th cup avocado oil for cooking (adjust amount as needed)

Method

  1. Heat oil in a broad pan.
  2. Add spices, salt, okra, onion, tomato paste/amchur. Cover the lid of the pan.
  3. Cook on low-medium heat for 15-20 minutes. Turn okra 2-3 times, with a spatula, in between.

Makes 2-3 servings
