Almond flour biscotti

Holiday treats to echo your wishes for good health and long life.

Ingredients

  • 2 1/4 cup almond flour
  • 2 tbsp flax meal
  • 1/4 tsp salt
  • 4 1/2 tbsp honey or maple syrup
  • 1 tsp vanilla extract or 1/4 tsp vanilla bean powder
  • 3/4 cup chopped pecans
  • 1 cup fresh cranberries, crushed into chunky pieces by pulsing a few times in Magic Bullet/ blender
  • zest of 3/4th fresh orange orange or 1 1/2 tbsp dried orange zest
  • 100% dark chocolate, 2-3 squares

Method

  1. Preheat oven to 350 F
  2. Combine all dry ingredients
  3. Add honey, cranberries, orange zest. Mix well and fold in chopped pecans.
  4. Divide the dough into 2
  5. Flatten out each dough into 13×3″ sized sheets onto a cookie tray lined with parchment paper
  6. Bake for 350 F for 15 minutes
  7. Take out of oven and cut each dough into 7-8 pieces with a long, sharp, serrated edged knife
  8. Spread out the slices on the tray and bake at 300 F for 7-10 minutes or until the slices are golden brown.
  9. Cool for 30- 40 min
  10. Melt chocolate in microwave and transfer to into a ziploc bag (toward a corner). Snip off the tip of that corner. Use this as chocolate piping bag for your biscotties.

Notes
Makes 14- 16 medium sized biscotties. Each biscotti has 4g carbs.
Do not use dried cranberries because they always contain sugar or juice
Serving Suggestions- limit to 1 biscotti a day per person
Zest: if zesting is difficult, crush orange peels into small chunky pieces in a blender separate from cranberries.
